    Protecting and defending agricultural biodiversity means preserving the rural landscape, keeping knowledge and handing down millennial stories to deliver this heritage to future generationsi.

    The soups of cereals and legumes are one of the typical dishes of the Italian tradition, each region has its own version that respects the characteristics of the area.

    Some consider the soup a poor meal, in fact the mix of energy and Mediterranean flavors amazes every time.

    This soup represent a complete meal full of all nutrients, and in it are gathered the legumes that are cultivated by ancient time on the Murgia on the border between Puglia and Basilicata (Italy), together with the grain.

    HOW TO PREPARE THE SOUP:

    Keep soaking the desired amount of legumes and cereals of the soup, about 10-12 hours.

    Cook slowly in a pot, carefully covering legumes and cereals with water.

    Add according to your taste: salt and flavors (onion, garlic, celery, etc.).

    Wait for your favorite cooking point.

    HOW TO EAT THE SOUP:

    Soups are recommended for every age, ideal (warm) in winter and very good (even cold) in summer.

    Serve in a plate by adding a string of extra virgin olive oil made in Italy.

    Khorasan durum wheat re-milled semolina, ideal for making pasta, Bread, Focaccia, Pizza.

    This durum wheat re-milled semolina is the result of a rigorous selection of raw materials. Khorasan Durum wheat, botanically known as Triticum turgidum ssp. turanicum, takes its name from a region of Iran where it was described for the first time in 1921, it is also cultivated in Puglia and Basilicata in the south of Italy. The flours and Semolinas from Korasan Durum Wheat have an amber color and a slightly sweet flavor, which makes them suitable for the production of pasta and bread, baked goods and various sweetnesses.

    Thanks to an artisan grinding process, consists of a few steps and it is carried out cold, this re-milled semolina preserves all the organoleptic quality of the cereal.

    Antico Bianco Locorotondo DOP

    Born from a blend of the three autochthonous grapes: 60% verdeca, 35% White On Alessano, 5% Minutolo Antico is a white wine with a PDO (Protected Designation of Origin) typical of Valle d’Itria product since past by farmers in the place to try to exploit the resources of the territory. As the name already suggests, the Old is vinified according to the tradition of the old farmers and wine producers in the Itria Valley, with a traditional farming system sapling, the grapes of the three local wines are combined in predetermined quantity since the plant then harvested, de-stemmed and vinified together with the most modern winemaking techniques. The former shows a light straw yellow color with greenish reflections characterized by a fruity but dry taste and full-Long that remains in the mouth. Wine that is drunk young, excellent as an aperitif, it is well suited to the combination of dishes based on fish, crustaceans and shellfish.
